Innophos offers high-protein beverage solutions | 2021-09-20


CRANBURY, NJ. – Innophos Inc. offers Texture Melt LM89 and DKP (Dipotassium Phosphate) to enhance the texture, appearance and taste of high protein beverages containing whey, collagen and vegetable sources.

Texture Melt LM89 provides buffering capabilities and prevents age gelling. The ingredient resists pH changes when an acidic or basic component is added, which makes the protein more soluble, more stable and easy to go through the pasteurization process, the company said.

“Phosphates are known to be powerful buffers, so product developers only need to use a small dose compared to phosphate-free ingredients to be effective,” said Amr Shaheed, Manager of Technical Services at Innophos. “This leads to lower usage costs and extends the shelf life of the product as it improves stability.”

The functionality of DKP in plant-based applications was only recently discovered, he added. DKP meets the standards of the USDA National Organic Program.

Texture-Melt LM89 and DKP are part of a range of phosphate solutions from Innophos. The company’s phosphates help food processors develop meat, seafood and poultry products while improving efficiency and reducing costs.
